Make these refreshing, healthy rolls as an appetizer or light snack. These rolls can be served as is, or with your choice of sauce. The sauce I used is a store bought peanut sauce. I added teaspoon of chili garlic sauce for a little heat.
Prep Time: 15-20 minutes
Cook Time: 2-3 minutes
Total Time: 17-23 minutes

Ingredients:
- 1/2 cabbage
- 2 golden beets
- 2 eggs
- spring roll rice wrapper
- chives
- mint
- cilantro
- choice of dipping sauce
Steps:
- Wash vegetables, then chop cabbage and golden beets.
- Over medium high heat, cook egg omelet for about 2-3 minutes. Once eggs cooled down a little, slice into smaller pieces.
- Dip rice wrapper in hot water and begin to put your desired stuffing: eggs, cabbage, beets, cilantro, mint and chives.
- Roll up and ready to eat or dip in your choice of sauce.
