I haven't tried grilling these yet, but my mouth is watering at the thought of marinating skinless thighs for an hour or two in the refrigerator and then grilling.
Preheat oven to 350 degrees F. Rinse chicken, pat dry, rub with salt and pepper, and place on a baking sheet. Combine jalapeno, cilantro, garlic, honey, olive oil, and lime juice in a blender or food processor; blend until jalapenos are finely chopped and evenly spoon the mixture over the chicken.
Bake uncovered, turning once and basting after turning, for 45 to 60 minutes or until chicken is cooked and juices run clear.
