Peaches and Cream Muffins


  • 1 (14 oz.) can sliced peaches, drained
  • 4 oz. cream cheese
  • 2 eggs
  • 1 1/4 cup milk
  • 1/3 cup honey
  • 1/4 cup melted butter
  • Ad

  • 1 tsp. grated lemon rind
  • 1 1/2 cup bran cereal
  • 2 cup flour
  • 1 Tbsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt


Preheat oven to 400 degrees F. Grease 12 large muffin cups or line with paper cupcake liners. Chop peaches and cream cheese into cubes. Beat eggs lightly with fork in bowl. Stir i milk, honey, butter and lemon rind and mix well. Add cereal and mix well. Stir peaches and cream cheese into cereal mixture. Stir cereal mixture into liquid mixture, mixing just until moist. Spoon into muffin cups, filling to top. Bake for 20-25 minutes or until test done. Let cool on rack. Store in airtight container. Makes 24 muffins.
