Overnight Lettuce and Shrimp Salad

Great salad. Love the water chestnuts and shrimp!

Ingredients:

  • 1 large head lettuce, turn in chunks
  • 1 bunch celery, sliced
  • 1 bunch green onions, sliced or 1 red onion, chopped
  • Ad

  • 1 can water chestnuts, sliced (or more, if desired)
  • 1 pkg. frozen peas, unthawed
  • 2 cups mayonnaise
  • 2 Tbsp. sugar
  • 6 hard boiled eggs
  • 1/4 - 1/2 cup parmesan cheese
  • 2 cans shrimp (or ham or chicken, if you don't like shrimp)
  • bacon bits or croutons (on the side)

Directions:

Place first 5 ingredients in layers as listed in recipe in very large bowl. Spread 2 cups mayonnaise over top of layers and sprinkle with sugar. Cover and refrigerate overnight. Before serving, add the eggs, cheese and meat. On the side, serve bacon bits or croutons.
