Granola Yogurt Parfait

This wonderful granola recipe is great in a yogurt parfait. It has been tweaked to yummy perfection! Serve over vanilla yogurt and fresh fruit (or your favorite frozen fruit like sweetened raspberries).

Ingredients:

  • 1/3 cup vegetable oil
  • 1/4 cup honey
  • 1/3 regular box whole oats (not quick) - 4 -5 cups
  • 1 cup coconut (unsweetened)
  • 1 cup pecan pieces (walnuts or almonds)
  • 1 cup dried fruit (raisins, Craisins, apricots, cherries, etc.)

Directions:

Heat oven to 300 degrees F.

Line jelly roll pan (cookie sheet with sides) with foil. Pour vegetable oil and honey in middle and heat for 5 minutes. Remove from oven, stir and add oats, coconut, and nuts. Heat 10 minutes, take out and stir, repeat this process two more times for a total of 30 minutes. Watch carefully, you may not want to go the full 10 minutes the last time. Don't burn your nuts! Remove from oven and add dried fruit to hot mixture. Cool and store in airtight container.

For parfait: Layer favorite yogurt in bottom of bowl. Top with fresh fruit and granola - voila!
