Floating Fruit Parfaits

Ingredients:

  • 1/2 cup sliced strawberries or cantaloupe balls
  • 3/4 cup boiling water
  • 1 (4 serving size) pkg. strawberry Jello
  • 1/2 cup cold water
  • 3/4 cup ice cubes
  • 1 cup plus 6 Tbsp. thawed Cool Whip

Directions:

Divide strawberries into 6 parfait glasses.

Pour boiling water into large bowl, add gelatin and stir until all dissolved. Add cold water and ice cubes and stir until ice is completely melted. Remove 3/4 cup of gelatin, pour evenly over over strawberries.

Refrigerate 20 minutes or until gelatin is set but not firm.

Add 1 cup cool whip to remaining gelatin, stir with wire whisk until well blended. Spoon evenly over gelatin.

Refrigerate 1 hour or until firm.

Top each parfait with 1 Tbsp. Cool Whip and serve.
