Place baking sheet on center rack in oven. Preheat oven to 400 degrees. Prepare crust mix for 2 crust pie. Shape into two disks. On floured surface roll one disk into 11 inch circle. Fit into 9 inch pie pan. Combine pie filling, apricots, cinnamon and nutmeg; spoon into pie shell. On floured surface roll remaining dough into 11 inch circle; arrange over filling. Trim and flute edge. With knife cut vents into top crust. Brush crust top with some egg; sprinkle with sugar. Bake on hot baking sheet, 45 minutes or until crust is golden and filling is bubbly. Cool on rack at least 2 hours. serve with ice cream, if desired.
