Cheesy Chunky Tomato Soup

Ingredients:

  • 1/4 cup chopped celery
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped green onions
  • 1/4 cup margarine
  • 1/4 cup Parmesan cheese
  • 2 cans tomato soup
  • 2 soup cans water
  • 2 cans stewed tomatoes
  • 1 Tbsp. basil
  • 1 tsp. chopped garlic
  • 1/4 cup shredded cheddar cheese
  • Tabasco sauce, to taste

Directions:

Saute celery, green pepper, and onions in margarine in saucepan. Add Parmesan cheese. Saute until combined. Add soup, water and tomatoes; mix well. Add basil and garlic. Bring to a boil. Simmer for 10 minutes. Add cheddar cheese and Tabasco sauce. Simmer for 5 minutes longer. 12-16 servings.
