Planning Enough Leftovers for Lunch

I was blessed with a husband who doesn't mind leftovers for lunch but found myself in a bind often with leftover meat but no veggies, or veggies but no meat. I now make sure to add an extra piece of meat as I'm cooking and I fix a plate before we eat. This saves me two ways; neither of us feels we have to clean the bowls and I know my DH will have a good lunch the following day.
