Blackberry Buckle

"Fruit Buckle" is another school cafeteria favorite, but most often we've seen blueberries used to make it. It is just as good (and maybe a little better) when you use the summer-fresh blackberries. It is a great family favorite served straight from the oven with whipped cream or vanilla ice-cream or just plain cold heavy cream.

These are summer treats and even more special because you are using fresh fruits found only during the hot months when they are most economical as well.

Ingredients:

  • 1/2 cup butter
  • 1 cup sugar
  • 1 1/3 cup flour
  • 1/2 tsp. cinnamon
  • 1 egg
  • 1 1/2 tsp. baking powder
  • 1/8 tsp. salt
  • 1/3 cup milk
  • 1 tsp. vanilla
  • 2 cups sweetened black berries (I use about 3 cups or a little more.)

Directions:

Combine 1/4 cup butter, 1/2 cup sugar, 1/3 cup flour, and the cinnamon. Mix until crumbly.

Cream remaining butter and sugar well. Beat in egg.

Sift remaining flour, baking powder, and salt together; add to creamed mixture alternately with milk. Stir in vanilla.

Spread batter into greased and floured 7 inch square pan or baking dish. Scatter blackberries over batter. Sprinkle crumb mixture over blackberries.

Bake at 375 degrees for 45 minutes. Serve with whipped cream if desired.

Prep Time: 15-20 minutes
Cooking Time: 45 minutes

This sounds easy and delicious. I love blackberries, and I've seen some just beautiful ones in our local food chain. They were very expensive but I noticed last week that they are coming down in price. Now's the time to take advantage of this good recipe. Thank you for sharing it.

I can never figure out the difference between crisps, buckles, cobblers, and something I just learned - slumps. I'm not seeing all that much difference other than cobblers seem to have more of a crust than the others. Anyway, they all are good, including this blackberry dessert. I think I've eaten them about every way possible.

I do remember eating Blueberry Buckle at our grammar school cafeteria,
but I don't remember them ever having Blackberry anything. I wonder why.

Back then, it was anything that was sweet which pleased us most of all.
If I remember correctly though, we'd have hamburgers on Wednesdays

almost every week, and some kind of fried potatoes and coleslaw, and
we'd have either Blueberry Buckle or Apple Crisp.

These recipes bring back so many nice childhood memories. My mom
made them for us too.

I had never heard of the term buckle as a name for food. :-) So I have learned something today! I have blackberries in my freezer and a husband who would absolutely love this! Thanks!

This does sound good! I have never made a buckle, I was thinking it was a dessert you made like a jelly roll, with the fruit rolled up in it, then smothered in more fruit.

This sounds a lot easier, soo good. I can't find blackberries fresh at a decent price, but frozen ones are on sale pretty often. I can see this being a favorite with just about any fruit!
