Potato Patties

These are very tasty. I made them with chicken and cheese.

Ingredients:

• 1 medium onion, diced small
• 6 oz. cooked meat, cheese, beans, or chicken (your choice)

• 12 oz. mashed potatoes, seasoned
• 1 egg yolk, beaten

Directions:

Put all ingredients into a bowl. Mix together and form into flat cakes. Dust with flour and shallow fry or brush with a little oil and grill.
