Cranberry Yogurt Nut Loaf


  • 2 1/2 cups whole wheat flour
  • 1/2 cup bran flakes
  • 2 Tbsp. wheat germ
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • dash salt
  • 1 beaten egg
  • 2 cups cranberry yogurt
  • 1/4 cup milk
  • 2 Tbsp. cooking oil
  • 2 Tbsp. light molasses
  • 2 Tbsp. honey
  • 1 tsp. lemon juice
  • 1 cup raisins
  • Ad

  • 1/2 cup chopped walnuts
  • 1/2 cup chopped pitted dates


Mix the whole wheat flour, bran flakes, wheat germ, baking soda, baking powder, and salt. In another bowl mix the egg, yogurt, milk, cooking oil, molasses, honey and lemon juice. Add this mixture to the dry ingredients and stir until moistened. Then add the walnuts and dates. Bake in a 9x5 inch loaf pan at 325 degrees F for 65-70 minutes. Cool for 10 minutes and remove from pan. Cool completely or refrigerate overnight before cutting.
