Asparagus Salad with Peanut Dressing

This asparagus salad is so easy to make using items you probably already have in your kitchen. Give it a try!

Yield: 2 servings
- 8 asparagus spears
- 1 Tbsp peanut butter
- 1 Tbsp mayonnaise
- 1 tsp salt
- 1 tsp soy sauce
- Peel the asparagus and chop them so they are bite sized.
- To blanch the asparagus, have a bowl of very cold or iced water ready. Add a pinch of salt to a pot of hot water and bring to a boil. Drop asparagus into boiling water and cook for about three minutes.
- Drain the hot water, immediately drop asparagus into bowl of cold water, then drain again. This will give your asparagus a great texture and a bright green colour.
- Mix remaining ingredients together then add the asparagus.
- Serve and enjoy!
