Beans and Rice with a Kick
This is a quick and easy recipe that tastes great, even the kids love it, and it costs less than $10 to make! (It's also great for diabetics!)
- 2/3 cup rice
- 1 1/3 cups water
- non-stick cooking spray
- 3/4 cup chopped onions
- 1 can black beans, rinsed and drained
- 1/2 cup water
- 1 (4 oz.) can chopped green chilies (we use mild for the kids)
- 2 tsp. taco seasoning mix
Cook rice in 1 1/3 cups of water.
While rice cooks, coat a medium non-stick skillet with cooking spray. Over medium heat, cook onions until translucent, stir frequently. Add remaining ingredients and simmer for 1-2 minutes. Add rice, then serve.
Prep Time: 15 Minutes
Cooking Time: 8-10 Minutes
