Escalloped Asparagus

I'm an asparagus lover, so I like it fixed most any way. This is a great side dish and I think the eggs and cheese really add to it.

Ingredients:

  • 2 cups frozen asparagus, partially cooked
  • 3 hard-boiled eggs, diced
  • 1 scant cup grated cheese
  • cracker crumbs
White Sauce:
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • sprinkle pepper
  • 1 cup milk

Directions:

Mix together White Sauce ingredients, set aside. Cover bottom of buttered casserole with thin layer of cracker crumbs. Add alternate layers of asparagus, eggs, cheese, a light sprinkle of salt on the eggs. Cover with white sauce, sprinkle buttered crumbs over the top. Bake at 350 degrees F. for 40 minutes or until brown.
