I must admit this is not a particular favorite of mine as I don't like sauerkraut, but my sister in-law loves it!
- 1 can sauerkraut (reg. size)
- 1 1/2 qts. water
- 1 cup chopped celery
- 1/2 cup chopped green pepper
- 1/2 cup chopped onion
- 1 cup sugar
- 1/2 cup salad oil
- 1/2 cup vinegar
Boil sauerkraut in water for about 10 minutes; drain and cool. Add celery, green pepper and onion. Mix and heat the following until sugar dissolves, the sugar, oil and vinegar. Pour over the kraut and vegetables. Mix and refrigerate several hours or overnight.
