I was just a kid when I first helped my mom make this salad. It was also my first taste of pistachio in anything other than ice-cream. What a delight, and how fast the salad caught on.
Every church supper we ever went to from then on, we'd find a pretty bowl of WaterGate Salad on the table. It brings back many nice memories, and it's good to see that it's still making its way around.
Sometimes we'd put extra Cool-Whip on top, then drained maraschino cherries along with 2-3 fresh mint leaves just for decoration. It would look so pretty.
