Irish Shortbread

Rich and delicate in flavor

Ingredients:

  • 2 sticks (1 cup) butter (not margarine)
  • 1/2 cup confectioners' sugar
  • 1/4 cup sugar
  • 1 1/2 cups flour
  • Advertisement

  • 1/4 tsp. salt
  • green food coloring (optional)

Directions:

Beat butter until fluffy and pale in color. Add the sugars a little at a time. Gradually add the flour and green food coloring (optional). Pat into a ungreased 9 inch pan.

Bake at 325 degrees F for 45 minutes or until slightly browned at edges. Don't overbake. Immediately cut into strips.

Even though there is a lot of foods I won't put in my body I have to say shortbread cookies using butter (not oil) is a weakness of mine. Not sure if I want to try this recipe because I will eat too much of this but knowing myself I will make this:)
