This is an easy, healthy substitute for traditional mayonnaise. You might find that you like it even better. It also makes a good dip.
Ingredients:
1 ripe avocado
2 Tbsp. milk
1 Tbsp. lemon or lime juice
1 tsp. Dijon mustard
1/8 - 1/4 tsp. Tabasco
Directions:
Peel and chop the avocado. Add it and all the other ingredients to food processor and process until smooth. You can also do this by hand. Smash the avocado with a fork until it is smooth. Slowly beat in the lemon/lime juice, milk, and mustard until well blended. Add Tabasco to taste. Chill. This is best used the same day.
