Lemon Zucchini Drops


The Drops

  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 1 egg
  • 1 cup finely shredded zucchini
  • 1 tsp. grated lemon peel or 2 tsp. lemon flavoring
  • Ad
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 cup raisins
  • 1/2 cup nuts

Lemon Glaze

  • 2 cups powdered sugar
  • 2-3 Tbsp. lemon juice


In a bowl cream butter, sugar and egg. Add zucchini and lemon peel or flavoring. Gradually add the rest of the ingredients. Drop by teaspoon on greased cookie sheets. Bake at 375 degrees F for 8-10 minutes or until lightly browned.


Combine powdered sugar and lemon juice until thin spreading consistency. Spread or drizzle over cooled cookies. Delicious!
