Freezing Uncooked Potato Chips?

How do you freeze uncooked potato chips to use in a restaurant? After two days they start to change colour?

Are you freezing the potatoes totally raw? They will discolor that way. Partially cook them first, then freeze them. See if that helps.

Raw potatoes kept under water do not discolor. Try freezing some in a container of water, and see if they discolor. Also check how well they fry up after thawing if they do not get discolored.

Blanching them first will solve that problem, but you will have to dry them off and freeze them individually as they are best when fried while still frozen...sounds like a lot of work for a restaurant. Most places around here cut them fresh to fry them fresh for that reason.
