Hot Potato Salad With Bacon

Ingredients

  • 8 golden potatoes, peeled and cut into 1/4 inch pieces
  • 1/2 lb. bacon, crumbled
  • 1/2 cup onion, chopped
  • 1/4 cup cider vinegar
  • 1/4 cup water
  • salt and pepper, to taste
  • fresh parsley, chopped

Directions

Boil the potatoes until they are just tender and drain. Cook the bacon and drain; reserve the drippings. Add the onions to the bacon drippings and cook until tender. Stir in the vinegar, water, salt and pepper and cook for 1 minute. Place the potatoes in a large bowl and add the onion and vinegar mixture. Stir in the bacon and sprinkle with fresh chopped parsley. Serve warm.

I do almost the same thing. Cook the bacon, chop it up. Put the grease in the pot of potatoes as you boil them(extra flavor). Drain but dont rinse when done. mix your potatoes and bacon with mayo and black pepper. This is the only way my family will have me make potato salad now.

Would you consider this a hot German potato salad? Looking for this recipe and maybe this is it, considering the vinegar. Can't wait to try this one.

Hot Potato Salad

Love the bacon in this recipe!

Ingredients:

  • 6 slices bacon, chopped
  • 1/4 cup onion, chopped
  • 1 Tbsp. flour
  • 1 Tbsp. sugar
  • 1/4 tsp. dill
  • 1/3 cup vinegar
  • 1/4 cup water
  • 3 Tbsp. mayonnaise
  • 4 cups cooked potatoes

Directions:

Cook bacon until crisp. Add onions and cook until tender. Drain off bacon fat. Blend in flour, sugar, vinegar and water. Cook until thick, stirring constantly. Remove from heat, stir in mayonnaise and dill. Pour dressing over potatoes and toss lightly. Bake at 350 degrees F for 20 minutes. Garnish with sliced hard-boiled eggs and parsley, if desired.

Servings: 4-6
Prep Time: 20-30 Minutes
Cooking Time: 20 Minutes
