Soup-er Macaroni and Cheese

My kids LOVE this recipe. My son, in particular, claims he wants to eat it for every meal. I usually quadruple the recipe and freeze half for later.

Ingredients:

  • About 2 cups cooked macaroni
  • 1 Tbsp. margarine
  • 1 can cream of cheese soup
  • 1/3 cup water
  • 1 cup grated cheddar cheese
  • 1 Tbsp. finely minced onion

Directions:

In a 1/2 quart casserole, blend hot cooked macaroni with margarine. Stir in soup, water, onion, and 3/4 cup cheese. Sprinkle remaining cheese on top. Bake in a 350 degree f oven for about 30 minutes or until browned and bubbly.

I usually also add extra onion, some garlic, and at least a cup of chopped broccoli. I sometimes top with breadcrumbs.

When doubling the recipe I occasionally use one can of broccoli cheese soup and one can of cheese soup.
