Ingredients
- 1 tsp. vegetable oil
- 1/2 cup chopped onion
- 4 cup okra pods, trimmed (about 1 lb.)
- 1/2 cup water
- 1/2 tsp. sugar or Splenda
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 (14.5 oz.) can no-salt added diced tomatoes, undrained
Directions
Heat oil in a medium saucepan over medium heat. Add onion, saute 2 minutes. Add okra and rest of ingredients, bring to a boil. Cover and reduce heat, simmering 20 minutes. Serves: 4 (serving size 1 cup)
