Stewed Okra and Tomatoes

Ingredients
  • 1 tsp. vegetable oil
  • 1/2 cup chopped onion
  • 4 cup okra pods, trimmed (about 1 lb.)
  • 1/2 cup water
  • 1/2 tsp. sugar or Splenda
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 (14.5 oz.) can no-salt added diced tomatoes, undrained

Directions

Heat oil in a medium saucepan over medium heat. Add onion, saute 2 minutes. Add okra and rest of ingredients, bring to a boil. Cover and reduce heat, simmering 20 minutes. Serves: 4 (serving size 1 cup)

Per serving, carbs: 14.3 g, fiber 4.6 g, fats: 1.4 g, protein 3.2 g, iron 1..5 mg., sodium 313 mg, calories 72.
