Potato and Green Bean Casserole

I've never cared much for canned potatoes but I recently made this dish and it was good.

Ingredients

  • 3 cans (16 oz.) cut green beans, drained
  • 2 cans (16 oz.) sliced potatoes, drained
  • *2 cans (8 oz.) sliced mushrooms, drained
  • 1 can (10 3/4 oz) cream of mushroom soup, undiluted
  • 1 can (2.8 oz) French Fried Onion Rings, crushed
  • Onion powder, to taste
  • Black pepper, to taste
  • Pam cooking spray

Directions

In a bowl, mix all ingredients except crushed onion rings. Prepare a 9 x 13 inch baking dish with cooking spray. Pour bean mixture in baking dish. Bake at 350 degrees F for 45-60 minutes. Take dish from oven and top with crushed onion rings. Return dish to oven for 12 minutes or till onions are browned. Can serve immediately or later.

*The mushrooms can be omitted or lessened, if desired

I dont care too much for canned potatoes either, but this sounds good and will definately try this out on my family. Thank you for sharing.

I made this recently, again, for a faster version. This time, I put it in the microwave for 6 minutes, while crushing my French fried onion rings. Sprinkled the FF onion rings over the entire casserole. I had my oven heating up & transferred my casserole from the microwave to the oven, till the onion rings were browned. This helped out tremendously & I had my casserole prepared and baked in record time.
