Peach Praline Pie

Ingredients:
  • 4 cups peeled & sliced peaches
  • 1/2 cup granulated sugar
  • 2 Tbsp. quick cooking tapioca
  • 1 tsp. lemon juice

Praline Layer:

  • 1/2 cup all purpose flour
  • 1/4 cup brown sugar (firmly packed)
  • 1/4 cup chopped pecans
  • 1/4 cup butter or margarine
  • 1 unbaked pie shell (9 inch)

Directions:

Combine peaches, sugar, tapioca, and lemon juice in large bowl; let stand for 15 minutes. Combine flour, brown sugar, and pecans in small bowl; cut in butter with fork or mix with fingertips until mixture is crumbly. Makes 1 1/3 cups. Sprinkle 1/3 of praline mixture over bottom of pie shell; cover with peach mixture. Sprinkle remaining praline mixture over peaches, allowing peach layer to show, if desired. Bake at 450 degrees for 10 minutes, then reduce heat to 350 degrees and bake for 20 minutes longer or until peaches are tender and topping is golden brown.
