1 lb. chipped ham or shaved boiled or baked ham from your deli dept.
16 oz. finely shredded cheddar cheese OR
1 lb small diced Velveeta cheese
4 hard- boiled eggs, chopped
1 cup ketchup or chili sauce
6 Tbsp. mayonnaise
1/2 small, finely diced onion (optional)
2 Tbsp. sweet pickle relish (optional)
Hot dog rolls
aluminum foil
Directions
Chop deli ham into small pieces and add cheese and chopped eggs in a medium bowl. In a small bowl, mix ketchup, mayo, onion and relish and incorporate sauce into the ham and cheese. Fill hot dog buns with desired amount of ham filling and wrap in foil packets. Bake 325 degrees F for 10-15 minutes. Filling will be hot, so take caution when tasting. Chill any leftover filling and use within three days.
I have also made these sandwiches on hamburger buns and steak rolls too. You can decrease the cheese and eggs to suit tastes. My son loves the standard recipe, but my daughter-in-law is not a hardboiled egg lover. Married less than a year, he lovingly removed the visible eggs and she actually requested the recipe. My mother-in-law used to make a batch of filling and wrap the stuffed sandwiches in aluminum foil and froze them. Then she'd bake them frozen at 350 for 20 minutes. I found through trial and error that a generously filled bun will still be frozen in the center, so do experiment and find your best bake time. Enjoy these everyone!
