Meatless Chili

I make a meatless chili full of veggies and spices and thick tomato base and serve it over brown rice or in a homemade bread bowl. My family never misses the meat!

Here's the chili recipe. To serve it in a bread bowl, make or buy bread dough and form small bowls, bake, slice off a "lid" from each, hollow out(reserving innards for croutons or stuffing) and fill just before serving.

Meatless Chili

3 TBL butter or marjarine
1 Cup sliced sweet onion
1Cup chopped red and green pepper
1 minced clove garlic
1 and 1/2 TBL chili powder
1/4 tsp crushed red pepper
16 oz. can stewed tomatoes-do not drain
2 16oz. cans partially drained dark red kidney beans
1/4 Cup chopped green onions
1 and 1/2 Cups grated sharp cheddar cheese
salt to taste

Melt butter and saute onions and peppers about 5 minutes or until tender. Add garlic, chili powder and red pepper. Add tomatoes and mash slightly with a fork. Bring to a boil. Cover and simmer for about 15 minutes. Add beans and simmer for 10 minutes. Add 1 of the cups of cheese and stir until cheese melts. Salt to taste. Put into bread or serving bowls sprinkle with green onions and rest of cheese and serve.

THis sounds yummy. Never really thought of making Chili without the meat before. Will give it a try. Thanks for sharing.
