Frosted Pumpkin Bars

Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp. ground cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cloves
  • 1 egg
  • 2 egg whites
  • 1 cup pumpkin (canned)
  • 1/4 cup canola oil
  • 2 Tbsp. water
  • 4 oz. reduced-fat cream cheese
  • 1 1/2 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1/4 tsp. grated lemon peel

Directions

In a mixing bowl, combine the first six ingredients. Add egg, egg whites, pumpkin, oil and water; mix well. Transfer to an 11x7x2 inch baking pan coated with nonstick cooking spray. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the middle comes out clean. Cool on a wire rack.

In a mixing bowl, beat cream cheese. Beat in confectioners' sugar, then vanilla and lemon peel. Frost bars. Chill for 15 minutes, then cut. Refrigerate leftovers.

Pumpkin Bars

A seasonal favorite of our family.

Ingredients:

  • 4 eggs
  • 1 2/3 cups granulated sugar
  • 1 cup cooking oil
  • 1 (16 oz.) can pumpkin
  • 2 cups flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda

Frosting:

  • 1 (3oz.) pkg. cream cheese
  • 1/2 cup butter, softened
  • 1 tsp. vanilla
  • 2 cups powdered sugar

Directions:

For bars: Beat together eggs and sugar until fluffy and light; gradually add oil and pumpkin. Add the remaining ingredients, and mix thoroughly. Spread batter in ungreased 10x15 inch baking pan. Bake at 350 degrees F for 25-30 minutes. Cool and frost with frosting.

For frosting: Beat all ingredients until smooth. Frost cooled bars.

Cooking Time: 25-30 Minutes
