French Green Salad

This salad is full of flavor and is perfect for a light lunch.

Ingredients:

  • 1 clove garlic, cut in 1/2
  • 1/2 tsp. salt
  • 1/4 tsp. dry mustard
  • 1/4 tsp. paprika
  • 1/4 cup salad oil
  • 4 cups greens of your choice, cleaned (romaine, endive, kale, etc.)
  • 2 Tbsp. vinegar
  • 2 Tbsp. lemon juice
  • black pepper, to taste

Directions:

Rub inside salad bowl with garlic. In a large bowl, mix salt, mustard, and paprika. Add pepper and blend. Mix in salad oil with a fork or whisk. Add greens, toss until leaves glisten. Sprinkle vinegar and lemon juice. Toss again.

Serves: 6
