Breakfast Pizza

Be honest, how many of us have eaten leftover pizza for breakfast? I know I have! Well, here's an easy pizza that's topped with breakfast ingredients. If you're a cheese lover like me then feel free to 'double cheese'.

Ingredients:

  • 1 can refrigerated crescent rolls
  • 1 cup cheddar cheese and/or mozzarella cheese, shredded
  • 1/2 cup green bell peppers, diced
  • 8 cherry tomatoes, halved
  • 2 eggs, scrambled
  • 4 breakfast sausage links or 4 slices of bacon, cooked, drained and sliced

Directions:

Preheat oven to 400 degrees F. Evenly press crescent dough in to a 12 or 14 inch round pizza baking sheet. Evenly sprinkle 1/2 cup cheese, the green peppers and the tomato halves onto the dough, leaving a slight border around edge. Gently press these ingredients in to the dough.

Bake in oven for 10 minutes. While the crust is baking, cook the scrambled eggs and cook and slice the sausage or bacon. Remove baking sheet from oven.

Spread eggs, sausage or bacon and remaining 1/2 cup cheese evenly across pizza. Return to oven and bake for another 3 minutes or until cheese is melted and edge of crust is golden brown.

Remove from oven. Let rest 5 minutes. Slice and serve.

Easy Breakfast Pizza

This is a tasty breakfast that is easy to make and is healthy. Plus my son loves having a pizza all to himself.

Ingredients:

  • 4 single serving pre-made pizza crusts
  • 4 Tbsp. melted garlic butter (1/4 tsp. garlic powder dissolved in the butter and 1 tsp. dried parsley)
  • 4 eggs scrambled and cooked until firm
  • 1 1/3 cups your favorite shredded cheese
  • 1 cup shredded frozen hash browns, thawed and excess water squeezed out
  • 1/2 lb ground sausage, cooked and drained or bacon, cooked, drained, and crumbled
  • 1 tsp. butter (to cook eggs)
  • 4 tsp. grated Parmesan (optional)
  • salt and pepper to taste (for eggs)

Directions:

Take the pizza crusts and brush 1 Tbsp. of garlic butter on each. If you like garlic butter a lot you can double the recipe and use 2 Tbsp. on each pizza. Top with 1/3 cup shredded cheese per pizza. Add one scrambled egg per pizza and 1/4 cup hash browns. Sprinkle sausage or bacon over top and bake at 350 degrees F until cheese is bubbly and crust is cooked (about 7-10 minutes). Serve and sprinkle with a tsp. of Parmesan cheese.

Grease 9x13 inch pan. Unroll crescent rolls and pat in pan; seal holes. Beat eggs and milk.

This is great for breakfast, but we like it at other meal times, too.
