Company Corn Custard Scallop
- 2 slices bacon
- 1/4 cup chopped green pepper (opt.)
- 1/4 cup chopped onion
- 1 can (1 lb.) cream style corn
- 1/2 cup soda crackers
- 1/t. sugar
- 1/2 tsp. salt
- 1/2 cup milk
- 2 eggs slightly beaten
- A dash of paprika
Set oven to 375 degrees. Cook bacon until crisp, in medium skillet. Cook pepper and onion in bacon drippings until tender; drain. Crumble bacon and stir all ingredients together. Pour into 1 1/2 qt. casserole. You may want to add a dash of paprika. Bake uncovered for 40-45 minutes.
