Sweet and Sour Green Beans

These have a great tangy taste!

Ingredients:

  • 8 slices bacon
  • 1 onion
  • 1 cup brown sugar
  • 3/4 cup vinegar
  • 3 cans French-style green beans

Directions:

Cut bacon into pieces and fry, then set aside. Chop and brown onion, then combine with bacon and add the brown sugar, vinegar, and beans. Simmer until heated through.

Servings: 10-12
Prep Time: 10 Minutes
Cooking Time: 15 Minutes

Sweet and Sour Green Beans

Ingredients

  • 3 cups water
  • 1 or 2 lb. fresh green beans (rinsed)
  • 1 medium chopped onion
  • Salt and Pepper to taste
  • 2 Tbsp. all purpose flour
  • 2 Tbsp. margarine
  • Equal amounts of sugar and lemon juice

Directions

Cook green beans, onion, salt and pepper in water till tender. In a separate pan, melt butter; add flour to make a paste. Add 2 cups water from the green beans; stir well and continue to heat. Add lemon juice and sugar to your liking. After this starts to thicken, add drained green beans. Can serve hot or cold.

Recipe: Sweet and Sour Green Beans

Ingredients

  • 1 lb. green beans (4 cups), trimmed
  • 4 oz. bacon, chopped
  • 3 Tbsp. brown sugar
  • 3 Tbsp. snipped parsley
  • 2 tsp. red wine vinegar
  • 1 tsp. finely chopped shallot or onion

Directions

Cook green beans in boiling water for 15 to 20 minutes or until crisp-tender. Drain off water and set aside.

In a large skillet, cook bacon until crisp. Drain, reserving 4 teaspoons drippings. Return bacon and the reserved drippings to skillet.

Add brown sugar, parsley, vinegar, and shallot. Bring to boiling; reduce heat and simmer, uncovered, for 2 minutes.

Add green beans and heat through. Makes 4 to 6 side-dish servings.
