Kentucky Fried Chicken Cole Slaw

Not the actual recipe, but tastes much like it.

Ingredients

  • 1/3 c. sugar
  • 1/2 t. salt
  • 1/8 t. pepper
  • 1/4 c. milk
  • 1/2 c. mayonnaise
  • 1/4 c. buttermilk
  • 1 1/2 T. white vinegar
  • 2 1/2 T. lemon juice
  • 1 whole cabbage, chopped fine
  • 1 med. carrot, grated

Directions

Mix chopped cabbage and carrot. Mix all other ingredients. Add to cabbage mix. Chill for 2 hours.

The trick to making KFC Cole Slaw is to use tarragon vinegar. You can get the entire recipe at easykfcrecipes.com

KFC cole slaw is just cabbage, carrot and Marzetti's cole slaw dressing.

As an executive chef, I subcontract everything! One thing I have noticed about my very favorite cole slaw, KFC, is that the cabbage is cut in tiny squares. I suspect that a key to success is something that cuts the cabbage that way. (03/23/2007)

I found this recipe for KFC Cole slaw on a great site called Nancys Kitchen. The most recent version is http://www.nancys-kitchen.com/march-22-23-2007.htm. It`s a great site. KFC Cole Slaw 8 cups finely chopped cabbage 1/4 cup carrot, shredded 1/3 cup sugar 1/2 teas. salt 1/8 teas. pepper 1/4 cup milk 1/2 cup mayonaise 1/4 cup buttermilk 1 1/2 tbls. white vinegar 2 1/2 tbls. lemon juice Cut cabbage and carrots into small pieces about the size of rice kernels. (The food processor is great for this!) In salad bowl, combine the sugar, salt, pepper, milk, mayonaise, buttermilk, vinegar and lemon juice. Beat until smooth. Add the cabbage and carrots. Mix well. Cover and refrigerate for at least 2 hours before serving. Serves 6 to 8. (03/23/2007)

I can tell you that Kentucky Fried Chicken cole slaw does NOT have celery seeds in it.. its one of my favorites at KFC and I HATE celery seeds and know for sure there are none in it (no offense to those who have given you recipes) (03/24/2007)

The colonel's cole slaw dressing uses Tarragon Vinegar, not white vinegar. I used to work there and made about a gazillion batches of the stuff. The dressing has miracle whip, taragon vinegar, salt and sugar. i only know the portions for 50 lbs worth of cabbage so the "recipe" i know would not help very much. (03/25/2007)

(b)I too used to work at KFC,(/b) the reason you see so many different versions of this recipe is that people are just trying to imitate it and don't really know the ingredients. KFC Cole Slaw has NO lemon juice, NO milk or buttermilk, NO celery seeds or any other spices and NO onions (that flavor that seems like onion just comes from the cabbage itself). As the other KFC employee said, it is just mayo, vinegar, sugar and salt. The cut of the cabbage comes from using an industrial size machine called a Hobart. (06/04/2008)

Sorry People KFC SLAW doesnt have Buttermilk, white vinegar, milk, or mayonaise in it. First off it uses Taragon Vinegar, Miricle Whip [not mayo] steriling salad oil salt and sugar also there are onions and carrots in it, contrary to what other posts say. I know, My family owned 6 stores at one time. I used to make the dressing from scratch every morning along with cutting and shredding of cabbage which at that time included fresh onions and carrots,,,not anymore it all comes in pre shreadded and the dressing comes in pouches to mixed in at the KFC outlet. all used to be done with 50 lb cases of cabbage so u will have to figured out how much of each for smaller batches (09/09/2008)

It does have pepper in it, but it is white pepper. Carrots, one medium onion, used vidalias. Never heard of them before I managed a KFC. lots of cabbage. Used miracle whip, one jar. 1 1/2 cups tarragon vinegar. 1/4 teaspoon white pepper. 1/2 cup oil. 1/2 teaspoon salt, 1 cup sugar. beat well. Mix well. Pretty simple really. I have to laugh seeing lemon juice, buttermilk etc. Only butter in it is the miracle whip. (09/11/2008)
