Zucchini Ground Beef Lasagna

Ingredients

  • 1 lb ground beef (or turkey, chicken)
  • 2 medium zucchini
  • 1 can diced tomatoes
  • 2 Tbsp. tomato paste
  • 1/2 green pepper chopped
  • 1 small can of mushrooms (can used fresh)
  • 1 med. onion sliced
  • pepper, garlic salt, paprika, chili powder, oregano, basil (Any spices to your liking)
  • mozzarella cheese to top

Directions

Peel zucchini in strips with a cheese knife. Salt the zucchini strips and lay them between paper towels to drain excess moisture for 30 minutes.

Meanwhile, brown the meat and drain. Add to it the spices of choice plus remaining ingredients except zucchini. Drain excess liquid.

Spray an 8X8 inch pan with nonstick spray. Make a layer with zucchini strips. Add 1/3 of the meat mixture. Sprinkle on 1/3 of the cheese. Repeat layers 2X ending with the cheese. Cover with foil and bake at 350 degrees F for 30 minutes.

Serves 4.

Source: A friend brought it to our weight watchers meeting and it was delicious!

Does anyone know the WW point value of each serving?

The recipe sounds very good.

But I'm a little lazy, I just slice accross (rounds) about 1/8 to 1/4 inch thick slices.

I do every thing else the same except no salt - I can't have salt.

And depending how thick you slice it, you may need to cook it a little longer.
