Pear and Nut Bread

Very good bread. A little different.

Ingredients:

  • 4-5 fresh pears
  • 3 eggs
  • 1 cup vegetable oil
  • 1 1/2 cups sugar
  • 1/2 tsp. grated lemon rind
  • 1 tsp. vanilla
  • 3 cups sifted flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 2/3 cup chopped nuts
  • 1/2 cup oats
  • 1/4 cup flour
  • 3/4 cup packed light brown sugar
  • 3 Tbsp. melted margarine

Directions:

Preheat oven to 325 degrees F. Grate pears. Beat eggs in mixer bowl until light and fluffy. Add oil, sugar, lemon rind, vanilla and grated pear; mix well. Sift dry ingredients together. Add to pear mixture; mix just until blended. Stir in nuts. Pour into 3 well-greased 4x7 inch loaf pans. Sprinkle mixture of oats and remaining ingredients on top. Bake 50-60 minutes or until loaves test done.

Instead of the oil, you could use pureed pears, baby sauce (Gerber) pears. I eliminate all I can when baking and this was one way to move out oil. I do this with carrot bread too.
