Ingredients:
- 3/4 cup olive oil
- 1/2 cup packed fresh herbs (finely chopped - mint, dill, etc.)
- 1/2 cup white wine vinegar
- 3/4 tsp. salt
- 1/2 tsp. minced garlic
- 1/4 tsp. freshly ground pepper
Directions:
We prefer this using fresh mint, and toss it with mixed greens, crumbled feta, diced red onion, and walnuts. This vinaigrette is also good tossed with assorted vegetables and served as a cold salad.
