Ingredients:
- 4 eggs
- 1/4 cup sour cream
- 1/4 tsp. salt
- dash pepper
- 1/4 cup shredded cheese
- crumbled cooked bacon
- sliced green onions
Directions:
Beat egg, sour cream, salt and pepper in 1 qt. casserole, using fork. Stir in cheese, bacon and green onions. Cover tightly and microwave on high 3-4 minutes, stirring every minutes, until eggs are puffy and set but still moist. Stir before serving. 2 servings. Recipe can be doubled. Increase microwave time to 6-8 minutes, stirring every 2 minutes.
