Garlic-Parmesan Toasts

Ingredients

  • 2 small loaves French bread
  • 4 tsp. olive oil
  • 1/4 cup chopped sun-dried tomatoes
  • 2 Tbsp. grated Parmesan cheese
  • 1 tsp. garlic powder

Directions

I cut each loaf of bread into 1/2 inch slices. Brush each one with the oil. Sprinkle the tomatoes on top, then the parmesan and the garlic powder. Put the slices on a baking sheet. Broil them about 5 inches from the heat until the bread is golden and the topping is heated through, 2 to 3 minutes. Makes 16 toast rounds. I sometimes add some snipped basil for a little different flavor. These are great for serving before your meal or they are really great with spaghetti and those types of dishes.
