Golden Corn Bread
- 1 cup yellow cornmeal
- 1 cup flour
- 1/4 cup sugar
- 1/2 tsp. salt
- 4 tsp. baking powder
- 1 egg
- 1 cup milk
- 1/4 cup shortening or vegetable oil
Sift together dry ingredients into bowl. Add egg, milk, and shortening or oil. Beat thoroughly. Bake in greased 9 inch square pan at 425 degrees F. for 15-20 minutes.

This is the best recipe out there for cornbread. For a more traditional taste, up the sugar to 1/3 cup, and bake it in your favorite 10" iron skillet (9" will do but you'll have to bake longer).
My kids LOVE "cornbread night."
