High Hat Meatloaf
- 3 lb. hamburger
- 2 cups seasoned croutons
- 1 can tomato sauce
- 1 cup chopped onions
- 1 1/2 tsp. salt
- 1 can finely chopped mushrooms
- 1/4 cup chopped ripe olives
- 1/2 cup milk
- 1/4 tsp. pepper
- 7 medium potatoes
- 1 stick margarine
- Add milk to mash the potatoes after they have been boiled and peeled. Salt and pepper to taste.
- dash paprika
- 8 oz. package cheddar cheese
- 1 big tomato, cut into 8 wedges
Combine the first 10 ingredients. Shape into 8 loaves. Place in shallow baking pan so that they do not touch. Bake, uncovered, in 350 degrees F oven for 30 minutes. Uncover and continue baking 30 minutes at 375 degrees F. Remove from oven. Turn oven to 450 degrees F. Add mashed potatoes on top of meatloaves. Sprinkle with paprika. Top with tomato sedges; sprinkle with cheese. Bake 5-10 minutes or till potatoes and tomatoes are hot. Makes 8 good servings.
