Stuffed Meatballs

Yummy and kids love it.

Ingredients:

  • 1 lb. ground beef
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup oatmeal or bread crumbs
  • 1 package stove top stuffing mix
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • Rice
  • salt and pepper to taste

Directions:

Mix the stove top stuffing according to directions. Put aside. Mix ground beef with egg, milk and oatmeal. Add salt and pepper to taste. Form meatball and make an impression in center. Add stuffing to each meatball, and form beef around the stuffing.

Cook the meatballs partially in a skillet until they are browned. Place the meatballs in a baking dish. Mix the two soups and pour over the meatballs. Bake in the oven at 350 degrees F. for about 35 minutes. Serve with rice, or noodles.
