I have dec' cakes for over 30 years, & the only icing I would use for REALLY hot weather is a royal icing that is made "cutable" by adding a little glycerine, if you can get hold of "Riches Topping " where you are, that is pretty good it is the cream that the "Dairy Queen" uses for their cakes, but I don't know how it would stand up to a really hot day, - best to try it on a small cake before the big event.

7 minute frosting is good and holds up. Check it out on all recipes.com

No icing is best for an outside wedding in the summer. They all melt!

This was on my husbands grooms cake and it was wonderful and is now my new favorite icing. Chocolate Ganache

Buttercream frosting will hold up fine in warm weather - definitely do NOT use whipped cream frosting when it's warm - it will melt - take it from a decorator! I would decorate the cake the night before (where I work I decorate the Saturday wedding cakes late on Friday night),
