RE: Need Creamy Curried Rice Salad Recipe

I haven't tried this but it sure looks good. I found it at the Allrecipes site:

http://allrecipes.com/Recipe/Curried-Chicken-and-Rice-Salad/Detail.aspx

Curried Chicken and Rice Salad

3 cups cooked white rice

2 cups chopped cooked chicken breast

1/2 cup celery, sliced

1/4 cup green onions, chopped

1/4 cup chopped red bell pepper

1 cup sour cream

1/4 cup mayonnaise

3 Tbsp. peach or mango chutney

2 tsp. ground curry powder

3/4 tsp. seasoned salt

2 Tbsp. pine nuts

In a large bowl, combine the rice, chicken, celery, green onions, bell peppers, sour cream, mayonnaise, chutney, curry and salt. Mix well, cover and refrigerate until chilled. Sprinkle with pine nuts before serving.

RE: Need Creamy Curried Rice Salad Recipe

I can't eat and don't like the flavor of Pine Nuts. Would it be taking away from the flavor to leave them out? : )

Editor's Note: It will change the flavor a little but from reading the ingredients, it should be great without them. (06/01/2007)
