Mini Reubens

Put in crockpot and melt:
  • 1 lb. Swiss cheese (chunks)
  • 2 packages. corn beef (3 oz. packages.)
  • 4 oz. can sauerkraut
  • 1 cup sour cream
  • 3 Tbsp. real mayonnaise
Serve open-faced on small slices of rye or wheat bread.

OMGosh, Reubens are my very favorite sandwiches! What better than to serve the mini ones on a cheese, cracker, pickle, olive and fruit dish! I don't make a Reuben many times for myself as I live alone and it can be rather pricey. Mini Reubens would be great for entertaining! Thanks for that!

not sure how this qualifies as a "mini" reuben in most places this is the "actual" size of the sandwich and a traditional reuben has 1000 island dressing on it
