Skinny Mexican Soup

Low in calories, high in fiber, fast and easy.

Ingredients:

  • 1/2 pound ground turkey (or some leftover chicken or turkey)
  • 1 can chicken broth
  • 1 can black beans (drained)
  • 1 can fat free refried beans with or without green chilies
  • 3/4 cup chunky salsa
  • corn chips
  • regular or reduced calorie cheddar cheese

Directions:

Cook the ground turkey. Then add broth, beans, and salsa. Mix well and let it come to a boil. Simmer for about 10 minutes. Put a small amount of corn chips in each individual bowl and add soup over the top. Add a little cheese and serve.

You can add olives if you want, and I have also added a can of diced tomatoes to make it go even further. We take leftovers for lunch the next day.
