Easy, tasty meal with a kick to it. One of our favorites!



Preheat oven to 350 degrees F. Place uncooked chicken in the bottom of a 9 x 7 inch or similar size Pyrex dish. Cover chicken with the bag of shredded cheese. Pour the jar of picante sauce over the chicken and cheese evenly. Add water (I use the picante jar to get remaining sauce out).

Bake 1 hour uncovered.

Serve over rice. Yummy! :)

This recipe is so easy and tasty. It is a semi-homemade meal that tastes homemade to me.


  • 2 bags Knorr Mexican rice
  • 3 to 4 chicken breasts, depending on size
  • Advertisement

  • 1 can black beans, drained and rinsed
  • oil for sauteing chicken and a little for Mexican rice according to directions
  • cumin
  • salt
  • pepper
  • garlic powder


Cut chicken breasts into bite sized chunks. Put a couple of tablespoons of oil into skillet and add spices to taste to oil. Stir around till mixed with oil, then dump in the chicken. Saute on medium heat till done, then crank up heat to brown.

Make the rice according to directions, bring to boil, cover, simmer for 7 minutes. Add the black beans when you start the rice, it will be fine in there.

When rice and chicken are both done, combine.

We shred up a little pepper jack cheese over the mixture. We also serve refried beans with this.

Tip: I buy the bags of chicken, I go ahead and cut up and make the entire bag. I use half in the rice, and save the other half for another meal. We have used it in a salad or mixed it with Knorr's Chicken flavored noodles. Feeds 4 people for around 5 bucks.

In microwave safe dish combine taco seasoning mix, salt and garlic powder. Coat chicken pieces with mixture and arrange side by 6 side in microwavable dish. Do not stack.

This is an easy recipe that even a novice cook can make. It is my husband's favorite. The best part is it is inexpensive to make and has only 4 ingredients.



  • 4 single serving size boneless/skinless chicken breasts
  • 1 (16 oz) jar of salsa (I like Chi Chi's or your favorite brand)
  • 1 can black beans (drained and rinsed)
  • 1 pkg. (8 oz) shredded cheddar cheese


Brown the chicken breasts in a frying pan that has a lid in a small amount of oil.

After the chicken is brown, add the entire jar of salsa and the black beans.

Cover pan and let the chicken simmer until cooked through (should take about 10-15 minutes).

Turn off burner and put shredded cheddar cheese on top of the chicken and recover). Let sit till the cheese melts and serve.

You can serve with rice or whatever you choose.

My husband likes it just like it is and usually he eats most of it by himself.

Boil 1 chicken, remove meat from bones and dice. Saute one medium size onion (chopped) and one green pepper (chopped).

Mix together:

  • 2 cans cream of mushroom soup
  • 2 cans cream of chicken soup
  • 1 can Rotel tomatoes and chilies, diced


  • 1 large bag Doritos chips (Nacho cheese) crushed, about 9 or 10 oz.
  • 1 cup grated cheddar cheese.

Mix everything together and put in 9x13 inch pan. Bake about 25 minutes at 350 degrees F.
