Turkey on a Bun

This is a suggestion for leftover turkey.

Ingredients

  • 1 Tbsp. butter or margarine
  • 2 Tbsp. water
  • 1 cup sliced or chopped onion
  • 2 cups of diced cooked turkey
  • 1/2 cup of diced celery
  • 1 tsp. of parsley flakes
  • 1/4 tsp. salt (optional)
  • pepper to sprinkle
  • 1/2 cup low calorie mayonnaise
  • 1/2 cup grated cheddar cheese
  • 8 Hamburger or Kaiser buns, split and buttered

Directions

Melt butter in frying pan. Add water and onion. Cover. Simmer gently, stirring often, until onion is clear and soft and moisture has evaporated.

Put in next 7 ingredients into bowl. Mix well. Add onion. Stir gently.

Divide among buns. Wrap each bun in foil wrap. Heat in 350 degrees F oven for about l5 minutes until heated through.
