Sausage Potato Quiche


  • 3 Tbsp. vegetable oil
  • 3 cups coarsely shredded potatoes
  • 1 cup grated cheddar cheese
  • 3/4 cup chopped browned sausage
  • Ad
  • 1/4 cup chopped onion
  • 1 cup evaporated milk
  • 2 eggs
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. parsley flakes


Combine vegetable oil and potatoes in 9 inch pie pan. Press evenly in pan, forming crust. Bake 15 minutes on 425 degrees F. Remove from oven. Layer cheese, sausage, and onion in crust. Combine remaining ingredients in bowl; bean well. Pour over layered ingredients. Bake for 30 minutes or until knife inserted in center comes out clean. Let cool for 5 minutes. Cut into wedges. 4-6 servings.
