Preheat oven to 350 degrees F. Cook pasta spirals per package instructions in large pot until al dente. Drain. In a medium saucepan, slightly heat milk over medium heat. Add cheeses and stir until completely melted. Return drained pasta spirals to large pot, add cheese sauce mixture; stir until evenly mixed. Add bell pepper and green chilies, stir until evenly mixed. Pour into a greased 2 quart casserole dish. Bake for 30 minutes. Let stand 5 minutes before serving.
Source: I like to have mac and cheese now and then but it's so boring. :-( Since I love Mexican Velveeta (the hotter flavor the better) and green chiles, I thought I would spice it up a bit and give it a touch of color with the red bell peppers. :-)
